A note from Happy Simple Mom:
My kids just finished their second week of school, and we are all TIRED.
You see, when homeschooling, we often slept a little later than we are now. 🙂 Over the past few weeks, we’ve had to adjust our systems and schedules, which has involved comments like this from my youngest, “Mama, why are we up? The sun isn’t even up!”
One of my biggest adjustments is preparing lunches the night before and batch-cooking easy items on Sunday.
Have you ever tried batch cooking? It can save you sooooo much time while still ensuring you eat good food.
This week’s batch item was two full pans of roasted potatoes with bell peppers and onions. My kids LOVE them for breakfast, and it takes me all of 10 minutes to prep plus cook time.
What are your favorite morning hacks? I’m all ears as we adjust to this new lifestyle.
